French toast with banana and maple syrup

Ingredients


 

  1. 2 eggs, lightly beaten
  2. 1 teaspoon vanilla extract
  3. 2 tablespoons thin cream
  4. 30g unsalted butter
  5. 4 thick slices brioche (square)
  6. 1 banana, sliced
  7. Creme fraiche, to dollop
  8. Maple syrup, to drizzle
  9. Ground cinnamon, to dust

Description

  1. Beat the eggs together with the vanilla and cream. Heat the butter in a large non-stick frypan over medium heat. When butter is sizzling, dip brioche slices in egg mixture, then place in the pan. Cook brioche for 2 minutes on each side, or until golden.
  2. To serve, stack 2 slices of French toast on each plate, then top with slices of banana and a small dollop of creme fraiche. Drizzle with maple syrup and dust with cinnamon.
