Mini ham and zucchini quiches

Ingredients


  • 2 sheets frozen puff pastry, partially thawed
  • 1 zucchini, grated
  • 80g leg ham, diced
  • 1/2 cup grated tasty cheese
  • 3 eggs
  • 1/2 cup milk

    Preheat oven to 210°C (190°C fan-forced). Grease 2 x 12 hole patty pans.

    Using a 7cm round cutter, cut 12 circles from each sheet of pastry. Press rounds into the holes of prepared pans.

    Spoon zucchini, ham and cheese evenly into each pastry case. Whisk eggs and milk in a jug. Season with salt and pepper. Pour evenly over the filling.

    Bake for 10-12 minutes or until golden and puffed. Serve quiches warm or cold.
